Vegan Chocolate Cake

I absolutely love chocolate. I used to live on dark chocolate digestive biscuits  , Mars bars, Cadburys, Thornton’s , you name it. I had to have it every day. I felt so obsessed with chocolate to the stage, that would buy many multi packs and hide them in my bedroom. It didn’t matter if I had any food all day as long as I have chocolate bars. Now when I look back to it I see myself like a actress of a silly drama.

About 18 months ago or so I started to clean my diet and eat vegetarian food and gradually started to feel better and healthier. Then in March I removed my caffeine addiction and that lead me to stop taking to much sugar and chocolate as I used to.  Being free from caffeine made me feel incredibly healthy. I lost the need to have dark chocolate biscuits, Cadburys or whatever. During all those months I have been doing constant studies and researches about food and nutrition. I felt I have to make the next step and adopt the vegan diet. So since 28th of May i am a beginner vegan and it is the best think I have ever done.

So this one change is making so much difference in my life. I feel so much alive and  a part of life, the power of the plants is giving my body incredible energy and the fact that no animal has been harmed so I can sustain myself  is adding drops of change towards the reducing and eliminating of factory farming.

So this new no meat, no eggs, no dairy life is very exciting. I love learning and today I decided to make my first vegan chocolate cake. There were many recipes  to choose from , but the one that I made today stood out as it has no flour either.I found the recipe on Eggless Cooking. com . This site is full with fantastic ideas about cooking and they are all very detailed and the photos are a good addition.

So here is what I used to make it.

  • 2 cups Chickpeas (cooked and drained)
  • 3/4 cup beetroots (cooked and pureed)
  • 1/2 cup Sugar
  • 1/4 cup Coconut Oil
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Vanilla Extract
  • 1/2 cup of drinking chocolate powder

It is very easy. Puree the beetroot in the blender. Then puree the chick peas and put both in the blender. Then add the sugar and all of the rest of the ingredients-vanilla, backing powder, coconut oil and the chocolate. Preheat the oven for about 15 minutes on 180 C.Put a backing paper on the tray and pour the mixture. Place in the middle of the oven and bake for about 45 minutes.

Then take is out and keep it the fridge to cool for about an hour or so. 

I personally couldn’t wait to try and taste it. It tasted amazing and it is very rich. It was more like a chocolate fudge, than cake , but next time I will put less water when i am blending the chick peas. Overall is a great desert, that you can enjoy.

For best results leave it overnight in the fridge. It is even better .
