You can make a vegan burger from almost anything-from potato and beans to kale and spinach.The key ingredient here is your imagination and willingness to try different combinations.Start by using your favourite ingredients and you will be amazed how easy it is.

You may be already known it, but sweet potato is one of the healthiest root vegetables, that you can eat. Sweet potatoes contain almost twice as much fiber as other types of potatoes. Contributing close to 7 grams of fiber per serving, they make an excellent starchy addition to any meal. 
They contain a large amount of vitamin B6. Vitamin B6 helps keep the walls of important blood passageways flexible and healthy which allows blood to flow freely.
In addition, sweet potatoes contain high amounts of potassium. Potassium plays an important role in lowering blood pressure by ridding the body of excess sodium and regulating fluid balance. It is also an important electrolyte that helps regulate the natural rhythm of the heart, and maintains normal function of the brain and central nervous system.

One medium sweet potato provides your body with the complete recommended daily allowance of vitamin A.Sweet potato is also one of the top vegetable sources of beta-carotene , as well as  vitamins C and E. These are potent antioxidant vitamins that play an important role in disease prevention and longevity.

So apart from all that sweet potato makes an ideal base for a burger. You can enjoy it in many different ways, but here is my recipe and it works every time.

 So here is what you need to make them

  • 4 medium size baked sweet potatoes (cooked and mushed)
  • 1/4 cup minced garlic
  • 1/4 cup olive oil
  • 2 ts salt/fresh ground black pepper
  • 2 ts turmeric
  • 1 ts ground fennel seed
  • 2 ts cummin
  • 1/4 cup fresh chopped mint
  • 2 ts dried oregano
  • 2 cup toasted breadcrumbs (3-4 slices bread)
  • 2/3 cup minced onions
  • olive oil for frying  or baking
  • some ketchup(optional) 

Here is what you do. This recipe makes around 16-18 burgers

Mush your cooked sweet potato and season them with some salt and black pepper.

In a larger bowl, combine chopped fresh mint, oregano, minced onions and breadcrumbs. Add the potatoes and combine all ingredients well.

Process or blend in blender or food processor for less than a minute until mixture comes together.

Return processed mixture to bowl, cover and refrigerate for at least 1-2 hours  before frying.

Shape the burgers and place them on a clean plate.

I cook them in the oven.Simply pour some olive oil on the bottom of a baking tray and place the burgers there and cook for about 20 minutes on medium heat.

You can fry them and they will taste great.

Once they’ve gotten a crispy outer shell, remove from oil, drain and serve hot. You can quickly cook up the entire recipe in 5-7 minutes.

All Mediterranean recipes are a true celebration of life, especially the ones, that are vegan.I love all those fruits and vegetables oozing with sunshine and amazing flavours. 

So for this Meatless Monday Vegan Style I am gonna share with you a wonderful combination-

Stuffed Aubergines and Styffed tomatoes server with leek and red pepper rice and sesame garlic sauce.meatless monday
So here is what you need to make the stuffed aubergine
2 medium sized aubergines(cut in half and scored into diamonds)
7 chestnut mushrooms
1 small onion
3 cloves of garlic
1 cup of tomato passata
1 stick of celery
bay leaves
a pinch of salt
black pepper
a dash of red wine (optional)

The first step of this dish is to roast the aubergines.Simply cover them in some olive oil and a bit of water and roast them in the oven turning both ways occasionally.Place the tray in the oven and cook it until its nicely golden and very soft.meatless monday vegan style

While your aubergine is in the oven you can make the sauce.
Simply saute the onion with the garlic with a bit of olive oil and water and then add all the herbs and spices.At this stage add the finely chopped mushrooms.Then add the tomato sauce , I use tomato passata, but chopped tomato will work as well.Let it cook for a bit on a low heat and then pour some wine if required. Turn off the and let rest.

Then all you have to do is simply pour the sauce on the top of the roasted aubergines and let it roast for about 20 minutes on a medium heat.

Serve with some fresh parsley and sprinkle with sesame seeds.

Leek and sweet red pepper rice is another incredibly easy but very delicious dish,

You need 1/2 leek

2 sweet red pepper

3 cups of water

1 cup of basmati rice




some hot paprika  (optional)

All you do is this-saute the onions and peppers with all the seasoning and herbs until soft and golden.Then you add the rice a bit of salt.Add 3 cups of water and let it simmer on a low heat until the rice has absorbed all the water . 

I ended up making the stuffed tomatoes as I had some tomato sauce left after I stuffed the aubergines.Simply remove all the inside part of the tomatoes.Then season them with a pinch of salt and pepper and .Mix some sauce with rice and then put it inside the tomatoes.Put the lid and roast for about 20 minutes on a medium heat.

And last but not least here is how you make the most amazing sesame garlic sauce .You would need a powerful blender, I use Vitamix.

Here is the recipe for the Sesame Garlic sauce

100 gr. raw sesame seeds

7 raw cashew nuts

100 mg of water

some lemon juice

a small bunch of parsley

3 cloves of garlic 

salt to taste.

Put everything in a Vitamix and blend on full power for about 90 seconds until is smooth.Put in a glass container with a lid and let it cool in the fridge for about an hour before serving.

Serve everything with love and a good size of a green salad.

Today I want to share with you one of the most popular party foods-the almighty pizza!Pizza is the ultimate comfort food as well and when all the ingredients are home made is a pure celebrations of ingredients and flavours. vegan pizza

In the last few months I have been loving making breads, cakes and I love touching bread dough.There is something magical and therapeutic about it. This time time I think I almost perfect it and if you are a beginner like me I cal almost guarantee you an awesome result. 


Here is what you need to make the pizza base.
2 cups of plain flour
15 gr.of yeast (I use dry active)
1 teaspoon of sugar
a pinch of salt
1 cup of warm water

Method:Mix everything together in a good size bowl and let it prove in a warm place.Depending on your plan you can start making it in the morning and let it prove all day on a room temperature. If you don’t have much time simply put it in the oven at about 40 degrees.

Once the dough has doubled in size  mix it again and you can start working with it.

Once you have made the roll, cut it into pieces and you can start rolling each base.

Here is what toppings I used, but as you can imagine you can put anything you like.

I used grilled mushrooms

grilled red peppers and 

cooked leeks

The sweetness on the leeks and the sweet peppers works really well with the chewy mushrooms and basil tomato sauce. Highly recommend it.
