You can make a vegan burger from almost anything-from potato and beans to kale and spinach.The key ingredient here is your imagination and willingness to try different combinations.Start by using your favourite ingredients and you will be amazed how easy it is.
You may be already known it, but sweet potato is one of the healthiest root vegetables, that you can eat. Sweet potatoes contain almost twice as much fiber as other types of potatoes. Contributing close to 7 grams of fiber per serving, they make an excellent starchy addition to any meal.
They contain a large amount of vitamin B6. Vitamin B6 helps keep the walls of important blood passageways flexible and healthy which allows blood to flow freely.
In addition, sweet potatoes contain high amounts of potassium. Potassium plays an important role in lowering blood pressure by ridding the body of excess sodium and regulating fluid balance. It is also an important electrolyte that helps regulate the natural rhythm of the heart, and maintains normal function of the brain and central nervous system.
One medium sweet potato provides your body with the complete recommended daily allowance of vitamin A.Sweet potato is also one of the top vegetable sources of beta-carotene , as well as vitamins C and E. These are potent antioxidant vitamins that play an important role in disease prevention and longevity.
So apart from all that sweet potato makes an ideal base for a burger. You can enjoy it in many different ways, but here is my recipe and it works every time.
So here is what you need to make them
- 4 medium size baked sweet potatoes (cooked and mushed)
- 1/4 cup minced garlic
- 1/4 cup olive oil
- 2 ts salt/fresh ground black pepper
- 2 ts turmeric
- 1 ts ground fennel seed
- 2 ts cummin
- 1/4 cup fresh chopped mint
- 2 ts dried oregano
- 2 cup toasted breadcrumbs (3-4 slices bread)
- 2/3 cup minced onions
- olive oil for frying or baking
- some ketchup(optional)
Here is what you do. This recipe makes around 16-18 burgers
Mush your cooked sweet potato and season them with some salt and black pepper.
In a larger bowl, combine chopped fresh mint, oregano, minced onions and breadcrumbs. Add the potatoes and combine all ingredients well.
Process or blend in blender or food processor for less than a minute until mixture comes together.
Return processed mixture to bowl, cover and refrigerate for at least 1-2 hours before frying.
Shape the burgers and place them on a clean plate.
I cook them in the oven.Simply pour some olive oil on the bottom of a baking tray and place the burgers there and cook for about 20 minutes on medium heat.
You can fry them and they will taste great.
Once they’ve gotten a crispy outer shell, remove from oil, drain and serve hot. You can quickly cook up the entire recipe in 5-7 minutes.
