I am a hummus expert. Since going vegan in May 2012 I have eaten aprox 250 kg of hummus, which is just under a kilogram a week. Following this philosophy I am an expert in many other foods, but hummus is one of my favourite.
The best hummus recipe is the one that you love the most. I will share with you mine.
This magical combination of chickpeas, tahini and olive oil is what hold a lot of my vegan creations together.Sometimes not having a dollop of hummus can make or break a nice meal.
My youngest son eats hummus the same way other people eat ice cream. And it’s wonderful to watch him.
According to impossible to confirm historical leftovers hummus first originated in ancient Egypt. We will never know if this was true, as according to some other immposible to confirm historians the origin of hummus are Greek. Either way it’s more that obvious that people have been eating hummus for centuries.
Now a days hummus is made all over the world and the variations are countless.The base is always the same a magical combination of chickpeas,tahini, lemon juice and garlic.
All set to make some hummusHere is what you need to make the hummus
cooked chickpeas 250 g
baking soda 1 tsp
tahini paste 170 g
juice from 1 lemon
olive oil 50 ml
4 cloves of garlic crushed
ice cold water 100 ml (
salt to taste
To make it simply start by putting everything into the food procesor starting with the chickpeas and gradually add the tahini, lemon juice , garlic, water in such order that you add the olive oil last. Once you have the creamy smooth texture place in a bowl and let it rest for 30 minute in the fridge.
Toasted pita bread, fried vegetables and fresh salad can make a wondeerful lunch and anytime dish.
My almost go to meal at any time of the day regardless of what time it is hummus , humongous bowl of salad and some kind of bread/pita bread/sourdough or rice. I do enjoy hummus and pasta but only on a side of the dish. My pasta sauces are very rich and loaded with vegetables so the hummus brings a perfect balance.
In my opinion hummus is not that nice with chips/french fries as it tends to be too dry in a sense of texture. In general hummus and potatoes can work but for that you need a nice saucy sauce to go with it.
Overall I can’t imagine life without eating hummus. It has made my vegan life incredibly easy and tasty.
