Cooking an easy vegan recipe and posting it on the 30 Day Vegan Blogging Challenge Facebook wall has given me a wonderful energy to cook every day and sharing is so much fun.
Cooking vegan is easy and so delicious!
I cook cosmopolitan vegan food, but mainly Mediterranean and Middle Eastern flavours. But today I am traveling a bit further east and I made a Chinese inspired potato wedges. It is a very easy vegan recipe and it is a brilliant combination of flavours, that you can use over and over again .
So here is what you need to make a medium size tray with food.
- 12 potatoes
- 1 red chili -seeded and chopped
- 6 cloves of garlic
- a small cup of Tamari sauce
- few spoonfuls of sesame seeds
- 3 tea spoonfuls of Chinese Five Spice
- 1/4 cup water
Its so simple and easy. Chop the washed potatoes into wedges and place them in a baking tray. In a small bowl mix all the other ingredients. Then pour them all over the potatoes and place in the oven for 30 -35 minutes in 180 C fan Oven . Mix occasionally to ensure they cook evenly and add water to make sure they have enough juice.
This salad is a great compliment to the potatoes and also full of goodness.Enjoy!
