How to make baked vegan donuts ?

Since going vegan I have learned so much about food. I have also learned and I am still learning that with imagination and passion you can create some amazing dishes.
Today me and the boys made our first ever baked vegan donuts. I used to buy the supermarket donuts nearly every week and sometimes I would buy the multi buy where you get 10 for the price of 5 and so on. The commercial donut is one of the worst possible snacks you can eat.

Doughnuts contain hydrogenated oils, white flour, sugar, and acrylamides. Essentially, they’re one of the worst cancer foods you can possibly eat. Reader’s Digest calls doughnuts “disastrous” as a breakfast food, and many experts agree it’s probably one of the worst foods available today.

I used to indulge on “dun kin donuts” as well, but I am more than happy I do not do that any more. The amount of sugar , that I used to consume on an average week could possibly scare me , but I do try not to think about that too much and focus on the present . The best thing in becoming vegan is the effortless effect,that is having on the children.

Today we are making together our first vegan backed donuts.The last few days they have been asking me to buy some donuts and this is the main reason I started to look for a recipe, that will tick all the right boxes-no fat, no eggs, no butter and very very tasty. So I found this one and we all agreed to give it a go.

As always everybody was very keen to help and here we are getting ready to mix and  taste and wait in anticipation to try our creation.

 

Here is what you need for the recipe. Preparation time takes approx. 10-15 minutes and cooking time is 15 minutes as well.

2 cups of flower

1 cup of unrefined dark sugar

1 cup of non-dairy milk -I used out milk

3 spoons of maple syrup

2 spoons of vanilla extract

1 tea spoon of backing soda

1 spoon of lemon juice

For the decoration

melted vegan chocolate

maple syrup

cinnamon

Take a small bowl and mix the milk with the lemon juice , then add the maple syrup and the vanilla. In a bigger bowl put the flour , then add the soda and the sugar-mix well.Then combine the two and mix.You will end up with something looking like that.
Then if you do not have a donut maker , take 2 spoons and using them spoon the mixture onto the baking tray, which you have covered with baking paper. Preheat the oven to 180 C/350 F . Then place the tray in the middle of the oven and bake for 15 minutes.
After you take them out of the oven you can glaze the donuts with a little maple syrup and sprinkle with some cinnamon . Here is Raki covering the donuts with a brush dipped in maple syrop.
If you prefer you can also make hole in the middle of the donut and make it look a but mire like it is expected.The other thing , that you can do is put some melted chocolate on the top as well and enjoy it that way.
Overall the baked donuts tasted really nice, especially if you have the patience to wait till they cool down completely. The donuts are nice and soft and the vanilla mixed with the maple syrup tastes really good. We will be making the again for sure.
