You can be healthy on almost any “diet” and the exact opposite is true, too. Healthy eating is simple in my opinion, a lot of factors these days that make it a bit complicated. As a vegan I have become a master of scanning food labels and also a master of buying food with no labels, which are in the fact the healthiest.
I have been kindly invited by Sara from Carob Cherub to share a favourite vegan healthy recipe. So here it is.
I love this combination of plants and it works every time. You can change the kind of leafy greens you are using, add an avocado, red peppers, beetroot, artichokes and it would be just as nice.
Humongous Salad with Pita bread, hummus and olives
Here is what you need to make this lovely lunch/brunch/munch
- 1-2 tomatoes
- 1/2 cucumber
- Lamb lettuce
- Celery
- Baby spinach
- Another leafy greens of your choice
- Handful of sprouts(peas, alfalfa, broccoli or any other kind of your choice)
For the dressing
- Juice of 1/3 lemon
- Fresh basil
- Sea salt
- Black pepper
- Olive oil
Simply chop all the vegetables and place into a medium size bowl. To make the dressing mix all the above ingredients and pour over the salad. Mix well and enjoy.
To make the pita bread simply make a mix of 3 spoonfuls of olive oil, lemon juice and oregano. Dip the pita in it and cook in the oven for about 3-5 minutes, until it’s sligthly golden.
On a side place some hummus and a serving of your favourite olives.
Serve and enjoy.This platter also makes a nice starter for a dinner party.
