I love rice. I can eat it hot or cold , in a salad, with curry, with no curry , with beans or no beans.I can cook rice on the cooker or cook rice in the oven. I simply can call rice my most favourite source of carbohydrate. Stuffed, peppers, stuffed vine leaves, stuffed tomatoes and so on you name it . There are many easy vegan recipes, that include rice and I keep rediscovering more. Anything with rice I love, love love. Recently I also rediscovered cous cous, which is a subject for another post, but I haven’t explored it enough. When it comes to rice I feel more as an expert. We have a gas cooker in our new house . Gas is a very temperamental thing-its so different than electric. While I was getting over myself regarding cooking on gas I rediscover the beauty of rice cooked in the oven.Here is a very easy vegan recipe, that you can enjoy hot or cold depending on your mood.
I normally look what I have and just create a quick balance in the flavours. So for the today’s recipe I Used
1 cup of washed rice
3 cups of filtered water ,
27 mushrooms (chipped in quarters)
Seasoned mushrooms7 sun dried tomatoes (chipped nicely)
17 olives.
Also you will need 7 spring onions , some salt and pepper , olive oil and basil.
Method of cooking
Put the chopped seasoned onions and the olive in the oven in 180 C until light gold. Then add the rice and all the other ingredients . Pour the water and mix well. Let it cook for approx. 20 minutes until all the water is absorbed by the rice. Serve with a squeeze of lemon or some vegan parmezan.
Its ready and so tasty !This dish also goes really well with some raw spinach.I was so hungry I forgot to take a photo of the well presented dish, but it was delightful . Enjoy and be well.
