Super Bean Salad using Florette Salad

I can not imagine a day of my life without a big bowl of salad. In fact if I miss a day of eating fresh vegetables or at least fruits I feel I have a lot less energy. Salad recipes are so easy and I believe you can make almost anything into a part of a salad. Regardless of what time of the day it is a nice bowl of fresh vegetables and fruits is always welcome. 

 

So when I was offered to create and a  Florette Salad recipe I was delighted. You can find it in most supermarkets and there are quite a few smaller shops that offer it as well.

Here is the recipe, that I created. Its called Super Bean Salad 

 

1/2 bag of Florette Salad, I used the Classic Crispy one, that includes some of my favourite leafy greens.This bag includes Frisée, Lambs Lettuce and  Radicchio. They go perfectly on it’s own, but also make a nice base for your favourite salad combination.

I dress the leaves in a very simple dressing by using 2 part olive oil, one part apple cider vinegar and then adding some salt and freshly grounded black pepper to taste. Once you have made the dressing simply pour it over the salad leaves and mix well.

Then place it in your serving bowl.

In another dish choose your favourite beans. I use a combination of red kidney beans, borlotti beans,green beans and some sweetcorn. To dress them I added some fresh mint and and a pinch of salt and black pepper. Mix them and place them on the top of your leafy greens. Then to finish it you can add some mini red peppers which are a nice compliment to the beans.

The salad is complete and can be enjoyed just like that or you can also make it as a part of a meal.

I like to serve the salad with Ciabatta bread bruschetta. You can use any other kind, but this one goes nicely with it. To make the tomato bruschetta you need some fresh tomatoe, fresh basil, olive oil and a pinch of salt.Simply slice the tomatoes into thin slices, season them with place on the top of the slices of ciabatta.

Pour some olive oil on the bottom of a baking tray and then place the slices there.Put the oven on a medium heat of 150C and bake the bread for about 10-12 minutes until the tomatoes are cooked. Take out of the oven and sprinkle with fresh basil.
